With Tom's vast experience in some of the world's great wine regions, he has managed to extract the best out of the Yabby Lake site - including incorporating the "yabby" into one of the winery's labels.

Not only has Tom helped continue to the tradition of Yabby Lake, which was created by the Kirby family as an iconic Australian family wine business - he has also maintained the identity and history of the site - and its yabbies.
